Hi, I’m Jordana Hirschel from The Blue Ladle. I’m here from Masbia, along with everyone else, and my gosh, how amazing. They feed 2.2 million meals per year. We’re here for their Tzimmes campaign and we’re really excited. They do so much and for any donation, Masbia will give you their Tzimmes cookbook with my recipe, hidden in there, along with many others.

Carrot Ginger Soup

Ingredients:

  • 2 large Shallots, minced
  • 4 cups large loose Carrots, roughly chopped
  • 1 Tbs. finely grated Fresh Garlic
  • 2 Tbs. finely grated Fresh Ginger
  • 2 Tbs. Extra Virgin Olive Oil
  • Kosher Salt
  • Fresh Ground Black Pepper
  • 32 oz. Organic Low Sodium Vegetable Broth
  • 32 oz. Water
  • Fried Leaks
  • Candies Ginger, Diced
  • Fresh Flat Leaf Parsley, minced

Preparation:

In a large pot, heat Olive Oil. Add Shallots salt and pepper and cook until translucent.  Add garlic and ginger and cook until fragrant, about 30 seconds.  Add carrots, salt, pepper, broth and water and bring to a boil. Lower flame to a simmer, cover pot and cook for approximately 40-45 minutes or until carrots are softened. Purée soup in batches in blender or with a stick blender to desired consistency.   Garnish each bowl with fried leeks, candied ginger and fresh parsley.
