Carrot Fries

Ingredients:

  • 5 large carrots
  • Coconut oil spray (or olive oil)
  • 1teaspoon ground Himalayan pink sea salt (or regular sea salt)

Directions:

Heat oven to 425 degrees. Peel carrots. Cut each into six fries by first cutting the carrot in half horizontally, then in half vertically. Take each of those quarters and cut them into three vertically. Cover a cookie sheet with parchment paper. Place carrots on the sheet, making sure they don’t touch. Spray the top of the fries. Sprinkle the salt on top of the fries. Bake for 20 minutes, turning over halfway through.
