Canadian Style Carrot Tzimmes with Pomegranate

  • 4 cups carrots, sliced into ¼ inch thick circles
  • 3 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • 2 tbsp honey
  • ½ teaspoon dried thyme
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ¼ cuptoasted pinenuts
  • ½ cup pomegranate arils

Preparation:

Preheat oven to 450F. Line a baking pan with parchment and drizzle with oil.

Place carrots on baking sheet and drizzle with maple syrup and honey. Sprinkle thyme, kosher salt, and black pepper. Use tongs or hands to toss until carrots are evenly covered.

Place in oven for 15 minutes, stopping to stir every 5 minutes. Remove from oven. Top with pomegranate arils and pine nuts. Serve right away or leave as is covered until ready to serve. This recipe holds heat well on its own when covered.
