It's hard to imagine in this day and age that there are people that go hungry, but for the less fortunate, putting food on the table is sometimes a luxury they can't afford.  The Masbia network of kosher soup kitchens is there to help out, serving 2 million meals every year to men, women and children in the New York area, dishing out home cooked, nutritious meals, that are both dignified and delicious.  As you prepare for the yomim tovim and spend your days peeling, chopping, dicing, slicing, cooking, baking, roasting and grilling (or even buying takeout),  take a moment to remember to help those who only wish they could be doing the same thing by making a generous donation to Masbia.

Mini Carrot Muffins

Having grown up in a home where traditions were sacred and never to be broken, I spent years trying to find a tzimmes recipe  that my family would love. Year after year, I tried recipe after recipe but while my husband and I enjoyed our tzimmes, our children had strong opinions otherwise. Eventually it occurred to me that it was carrots, not tzimmes, that bore special symbolism for Rosh Hashana, so I started making mini carrot muffins instead.  End of story, everyone loves them!

  • 3 carrots, grated
  • 1 cup flour
  • ½ cup oil
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 capful lemon juice

Preparation: 

Preheat oven to 350.  Beat eggs.  Mix in flour, oil, sugar, vanilla, eggs, baking powder and lemon juice. Stir in carrots. Pour into a mini muffin pan.  Bake 10 minutes.
